Odyssey 2004 - Lamb & Shitake Stew w/ Tomato-Cabernet Sauce
Pairs with Arger-Martucci Vineyards 2004 Odyssey
Ingredients:
(Serves 4)
1 Tbs. extra virgin olive oil
1 pound well-trimmed lamb shoulder meat cut into 3/4-inch cubes
6 ounces fresh shitake mushrooms, stemmed, caps cut into 1/2-inch pieces
1 large onion, coursely chopped
2 3x1/2-inch strips orange peel
2 large garlic cloves, minced
2 teaspoons chopped fresh rosemary
1 14 1/2-ounce can diced tomatoes juice
1 cup Cabernet Sauvignon or Odyssey
10 Kalamata olives or other brine-cured black olives, pitted, halved
1 cup orzo (rice-shaped pasta), freshly cooked
Preparation:
Heat oil in heavy large pot over high heat. Sprinkle lamb with
salt and pepper. Add lamb to pot, saute until light brown (5 min.). Add next 5 ingredients. Saute until onion is golden. Add tomatoes with juices and wine and bring to boil. Reduce heat to med-low, cover and simmer until lamb is tender, stirring occasionally, 1 hour 15 min.
Add olives to stew and simmer uncovered until sauce reduces and thickens slightly, about 5 min. Season lamb stew with salt and pepper. (Can be made one day ahead). Divide orzo among four plates. Top with lamb stew and serve.

Aged for 22 months in predominately French and Hungarian oak, the flavors in this wine showcase a virtual “spice rack” of cinnamon and nutmeg with the predominant black cherry and chocolate overtones that are characteristic of our Cabernet varietals from Atlas Peak.
